Granny Rosie’s Celery Soup

Serves : 6

Cooking Time : 30 mins

Celery is just coming in to season again in September and this is a super simple tasty soup you can whip up in minutes. Also freezes well.

Ingredients:

1 head of celery, finely chopped
1 onion, finely chopped
1 clove of garlic, crushed
2 medium potatoes, peeled and cubed
Up to 1 litre of vegetable stock
Glug of olive oil

Method

Fry up onion with olive oil on medium heat until trasnlucent
Add in garlic and fry for 1 minute
Add in celery and potatoes and fry for 2-3 minutes
Add in stock and simmer for 20-30 minutes, or until celery and potatoes are soft
Remove from heat, whizz to a smooth consistency and season with salt and pepper.
Serve!
