Granola

This granola is completely moreish. It’s delicious for brekkie, but also as a snack with a dollop of Greek yoghurt, or sprinkled on some stewed fruit. It also makes a lovely gift for someone.

Ingredients:

1kg organic jumbo oats (the larger oats work better than the regular ones)
2 cups of sunflower seeds
1 cup of pumpkin seeds
½ cup of ground linseed
3 cups of mixed nuts, roughly chopped (e.g. hazelnuts, almonds, cashews, walnuts)
1 cup raisins
1 cup dried cranberries
½ cup goji berries
2 cups organic extra virgin coconut oil
1-2 cups maple syrup
zest 1 orange
2 tsp ground cinnamon
Pinch or two of sea salt

Method:

Preheat the oven to 180 degrees. Line two baking trays with baking paper. Mix the oats, sunflower seeds, pumpkin seeds, linseed, nuts, cinnamon, orange zest and salt together in a large bowl.

Melt the coconut oil and maple syrup in a small pan

Pour over the mixture and mix well

Spread out over the two baking trays and put in oven for 20 minutes, mixing once or twice as it cooks.

After 20 minutes, remove from oven and reduce temperature to 160 degrees. Add in the raisins, goji berries and cranberries to the trays and toast for another 5 – 10 minutes or until lightly golden brown (you don’t want it too toasted or it goes a little bitter.)

Remove from oven and allow to cool before storing in glass kiln jars.
