Oat Muffins

These are a super quick and healthy wee muffin that my family loves. It is also a great way to use up leftover porridge. Simply replace the cup of dried oats for a cup of leftover porridge and reduce the amount of banana / yoghurt by a ¼

Ingredients:

1 cup of organic oats
1 cup of almond flour / ground almonds
1 tsp bread soda
1 tsp cinnamon
1 cup of mashed banana or ½ bananas / ½ natural yoghurt
1 tbsp oil
1-2 tsp honey and / or a handful of raisins for sweetness

Method

Preheat the oven to 160 degrees and prepare a muffin tray with 12 liners (I use the silicone ones, which are non-stick and reusable)
Pop the oats, almond flour, bread soda and cinnamon in a bowl and mix.
Add in the banana/yoghurt, oil and honey and mix until dry ingredients are all coated.
Divide the mixture evenly – you’ll get 10-12 out of it.
Pop in the oven for 20 mins.
Allow to cool before removing from cases.
